Dear Caro,
I enjoy cooking often, but as of late I have found myself using the same recipes over and over, and have been less and less motivated to cook. Do you have any recipes recommendations that could snap me out of this cooking rut?

Dear Hungry and bored,
I would be lying if I said I did not find myself in the same scenario often as of late. It can be really easy to fall into the trap of making the same food over and over, whether it be because of lack of inspiration or the paradox of choice (I get this often, there are SO many good recipes out there, it’s overwhelming).
Fear not, I have a fun variety or recipes to get you re-inspired and excited to cook again:
Vegan Kkanpoong Tofu and Spicy Garlic Tofu -- note, this is not for the intolerant to spice palette, this is SPICY, but it is SO good. I have found the more I cook with tofu, the more I recognize it’s versatility as a form of protein. What I love about this recipe is the crispy tofu, I mean you can really hear a crunch when you bite into it! I made a bowl of rice on the side and added the tofu on top and….wow….*chef’s kiss*
Agua de Horchata -- now I know this isn’t necessarily a meal, but it is a fun recipe nonetheless. One of my FAVORITE staples of Mexican cuisine, and it is surprisingly easy to make. It’s refreshing, yummy, and fun to prepare. This video is in Spanish but you can add subtitles or simply brush up on your Spanish ;)
Shrimp Spring Rolls with Peanut Dipping Sauce -- These are so fun to make! I love making these and changing the variation of what’s in them. What’s even better is no cooking involved!! These spring rolls are refreshing, easy and fun to make. Whenever I make them I like to make a little assembly line and add in my own improvised ingredients from time to time. Have fun with this one!
La Sopa Perfecta Para Este Clima Frío -- As you can already tell, I am a visual learner, hence all of the YouTube recipe videos….anyways, this one is a treat and it’s going to warm you right up during these cold times. This soup is also healthy and really easy to make. Again, the video is in Spanish, but utilize those closed captions OR….yup that’s right, brush up on your Spanish ;)

DJ M0RO’s low-key Music Show
This week is all about my deep love of Yola. She first made it across my desk when she sang on the groundbreaking Highwomen album (<3) and I am so grateful to now be following her solo career, after years of working on other projects and fronting bands like Phantom Limb.
Her recent release Hold On features two Highwomen Brandi Carlile & Natalie Hemby, along with Sheryl Crow. A true MVP lineup. The single is just everything I’m needing right now, the lyrics a powerful prayer for this moment, the driving soulful beat a gentle push forward. If you’re reluctant to dance just close your eyes and breathe - this song is medicine for sure.
Check out the other song she sang on this year, Give The People What They Want, off the Raphael Sadiq (again, <3) produced album Stand Up that includes some other great covers and tributes.
Apparently she’s set to play Rosetta Tharpe (godmother of rock n roll anyone?) in the upcoming Baz Luhrmann drama about the life and world of Elvis Presley so, that’s cool! But not due out till like 2022 cuz, read the room.

Here's a Friday ~*Hot Goss*~ pro-tip for any of my readers who may be thinking of pursuing a career in politics and public service: If you're an elected official to a state currently experiencing one of the worst humanitarian crises it has seen in years, following an unprecedented winter storm that has killed people and left millions more without water, food, and electricity, don't try to go to Cancun for a family vacation -- during a PANDEMIC! -- in the middle of all of this catastrophic mess. But if you do decide to fly off anyway, maybe then also don't try to throw your (10 and 12-year-old) daughters under the bus and use the "good dad" excuse when your absence of integrity leads to an uproar and a scandal. It makes you look like an even bigger asshole when it inevitably comes to light that your quick getaway was actually very hastily planned in response to the very same "freezing" conditions for which your constituents have been told to sacrifice themselves.
I just know someone, if not multiple people in that group chat had been waiting for the day to ruin Ted Cruz' life the way he has many other people. As someone who is haunted by the specter of all the embarrassing things she has said and done in her lifetime thus far at all ever, I would feel somewhat impressed by Ted's utter shamelessness at being the absolute worst person in a room -- nay, country -- at any given time were it not for the fact that his actions have very real, dire, distressing consequences for so many people (29 million at the very least, in fact).

If you are able to, please consider giving to mutual aid funds in Texas that are working around the clock to help people across the state. We'll figure out how to throw rotten tomatoes at Ted's mansion at a later date. For now, stay safe and warm wherever you are.
